Homemade Sausage Rolls

Sausage Rolls are my favourite things ever. I loved the days when my mam would make them for parties and special occasions, which were never often enough but only because of sausage rolls.

I first made them by wrapping a bought sausage in pastry and cooking it, graduating then to wrapping bigger bought sausages in pastry and cooking it. It wasn’t until a trip to a food market one day in London that I saw what could only be described as an ode to my love of sausage rolls.
Not a pre-bought skinned sausage wrapped in pastry, but sausage meat mixed and seasoned with all manner of flavours that made my heart skip a beat (later this was caused by an over abundance of sausage rolls).

My life was forever changed that day and so were the lives of the customers in where I worked. I couldnt keep them on the shelves. Our little shop went from serving all manner of savoury pastries in the morning to just sausage rolls and jambons.

Okay a bit melodramatic, but, I cannot over emphasise how much I love a sausage roll. The recipe below is for a basic homemade, meaty sausage roll, but you should all feel free to experiment with different herbs and spices to create your own flavour creation.

On a final note, serve them with baked beans (Batchelors). Thank me later.

Sausage Rolls Recipe

Serves: 4-6
Preparation Time: 20 minutes
Cooking Time: 25-30 minutes

Ingredients

  • 500g Sausage Meat (or see note below)
  • 1 sheet of Puff Pastry (shop-bought)
  • 1 small Onion, finely diced
  • 1 tsp Sweet Paprika
  • 1/2 tsp Ground Cumin
  • Salt, to taste
  • Black Pepper, to taste
  • 1 Egg, beaten (for egg wash)

Instructions

  1. Prepare the Sausage Filling:
    • In a large mixing bowl, combine the sausage meat, finely diced onion, sweet paprika, ground cumin, salt, and black pepper. Mix well until all the ingredients are evenly distributed.
  2. Prepare the Puff Pastry:
    • Preheat your oven to 200ยฐC (390ยฐF).
    • Lay the puff pastry sheet on a flat surface. If necessary, roll it out slightly to ensure it’s large enough for the sausage filling.
  3. Assemble the Sausage Rolls:
    • Divide the sausage mixture into even portions (depending on how many rolls you want to make).
    • Place the sausage filling along one edge of the pastry sheet, shaping it into a long log.
    • Carefully roll the pastry over the sausage filling, ensuring itโ€™s tightly wrapped. Press the seam to seal the edge and trim any excess pastry.
    • Cut the roll into your desired size (typically 2-3 inches per roll).
    • Place the sausage rolls on a baking sheet lined with parchment paper.
    • Brush each roll with the beaten egg to give a golden finish during baking.
  4. Bake:
    • Bake the sausage rolls in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the sausage meat is cooked through.
    • Remove from the oven and let them cool slightly before serving.

Serving Suggestion:

  • Serve the sausage rolls warm as a snack or as part of a meal with a side salad or dipping sauce.

Note: If you can’t find sausage meat, you can use shop-bought sausages instead. To get your meat remove the skins by rolling the sausages on a board, which will release the sausage meat with a good squeeze. This method works well and allows you to enjoy the same meaty goodness without the hassle of sourcing sausage meat separately.
