Phatman’s Creamy Pepper Sauce

Ingredients:

  • 2 tbsp Butter
  • 2 Shallots, finely diced
  • 3 tbsp Gravy Powder (Beef)
  • 400ml Water
  • 1-2 tsp Freshly Ground Black Pepper (adjust to taste)
  • 100ml Cream (Double or Heavy)

Method:

  1. Melt the butter in a medium saucepan over medium heat until it starts to foam.
  2. Add the shallots and sautรฉ until softened and golden, about 4-5 minutes.
  3. Stir in the gravy powder and cook for 1 minute, allowing it to blend with the butter and shallots.
  4. Gradually add the water, whisking continuously to create a smooth consistency.
  5. Add the freshly ground black pepper to taste. Start with 1 teaspoon and increase if you want a stronger peppery kick. Let the sauce simmer for 5-7 minutes, allowing it to thicken.
  6. Pour in the cream and stir well to combine, bringing the sauce back to a gentle simmer. Cook for another 2-3 minutes until it’s rich, velvety, and creamy.
  7. Taste, and adjust the seasoning with extra pepper or a pinch of salt, if needed.
