Phatman’s Tomato and Oregano Gravy

Ingredients:

  • 2 tbsp Butter
  • 2 Shallots, finely diced
  • 1 tbsp Tomato Purรฉe
  • 3 tbsp Gravy Powder (Beef or Chicken)
  • 400ml Water
  • 1 tsp Dried Oregano
  • Salt and Pepper, to taste

Method:

  1. Melt the butter in a saucepan over medium heat until it starts to bubble.
  2. Add the shallots and sautรฉ until softened and slightly golden, about 4-5 minutes.
  3. Stir in the tomato purรฉe, cooking for about 2-3 minutes to reduce its raw taste and enhance the tomato flavor.
  4. Add the gravy powder, mixing it with the butter and tomato purรฉe for 1 minute to create a flavorful base.
  5. Slowly pour in the water, whisking to combine the ingredients into a smooth sauce.
  6. Add the dried oregano, stirring it into the gravy and letting it simmer for 5-7 minutes, thickening and developing its full flavor.
  7. Taste and season with salt and pepper, adjusting to your liking.
