Phatman’s Tomato and Oregano Gravy
Ingredients:
- 2 tbsp Butter
- 2 Shallots, finely diced
- 1 tbsp Tomato Purรฉe
- 3 tbsp Gravy Powder (Beef or Chicken)
- 400ml Water
- 1 tsp Dried Oregano
- Salt and Pepper, to taste
Method:
- Melt the butter in a saucepan over medium heat until it starts to bubble.
- Add the shallots and sautรฉ until softened and slightly golden, about 4-5 minutes.
- Stir in the tomato purรฉe, cooking for about 2-3 minutes to reduce its raw taste and enhance the tomato flavor.
- Add the gravy powder, mixing it with the butter and tomato purรฉe for 1 minute to create a flavorful base.
- Slowly pour in the water, whisking to combine the ingredients into a smooth sauce.
- Add the dried oregano, stirring it into the gravy and letting it simmer for 5-7 minutes, thickening and developing its full flavor.
- Taste and season with salt and pepper, adjusting to your liking.
