Rosemary & Red Wine Gravy

Ingredients:

  • 2 tbsp Butter
  • 2 Shallots, finely diced (or onions for a heartier flavor)
  • 3 tbsp Gravy Powder (Beef)
  • 200ml Red Wine
  • 300ml Water
  • 1 Sprig of Fresh Rosemary

Method:

  1. Melt the butter in a medium saucepan over medium heat until it begins to sizzle.
  2. Add the shallots (or onions if using) and sautรฉ until they soften and turn golden, about 4-5 minutes.
  3. Pour in the red wine once the shallots have softened, and let it simmer for 2-3 minutes to cook off the alcohol, reducing slightly for a more concentrated flavor.
  4. Stir in the gravy powder and cook for a minute, letting it mix with the wine and butter to create a rich base.
  5. Gradually add the water, whisking continuously to dissolve any lumps and achieve a smooth consistency.
  6. Toss in the sprig of rosemary and bring the mixture to a simmer, cooking for about 7-10 minutes, allowing the flavors to meld and the gravy to thicken.
  7. Remove the rosemary sprig and give the gravy a taste. Adjust the seasoning with salt and pepper if necessary.
