The Hotdog Lattice

I love these, but they have disappeared from the delis. Which means that I had to go an create my own. It is a combination of sausage and pastry, whats not to love, and if you have read my post on the virtues of the sausage roll, you will know that it is a combo I am most partial to.

Here, there is the added baked in mustardy goodness (which you can do in your sausy rolls if yoo wish) and the often deliciously smoked frankfurter. I know many will bemoan the contents of a frankfurter as possibly not real meat. Do I care, no I do not.

Homemade Hot Dog Lattice Recipe

Ingredients:

  • 2 Frankfurters
  • Ready-made Puff Pastry (or homemade if preferred)
  • French’s American Mustard (to taste)
  • 1 Egg (beaten, for egg wash)
  • Optional: Sesame seeds or poppy seeds (for topping)

Instructions:

  1. Prepare the Pastry and Frankfurters:
    • Preheat your oven to 200ยฐC (392ยฐF).
    • Roll out the puff pastry on a lightly floured surface until itโ€™s about 1/4 inch thick.
    • Cut out a rectangle that is large enough to comfortably fit two frankfurters cut in half and laid side by side, with some extra pastry around the edges.
  2. Assemble the Base:
    • Spread a generous layer of French’s American Mustard over the center of the pastry where the frankfurters will sit. French’s mustard provides a classic tangy flavor that complements the savory frankfurters perfectly.
    • Place the two frankfurters side by side on top of the mustard-covered pastry.
  3. Create the Lattice:
    • Using the remaining pastry, cut thin strips (about 1/2 inch wide) for the lattice. Youโ€™ll need enough strips to cover the frankfurters in a crisscross pattern.
    • Carefully lay the strips over the frankfurters in a lattice pattern, alternating over and under to create a woven effect.
  4. Seal and Brush with Egg Wash:
    • Press the edges of the lattice strips down onto the base pastry to seal the lattice securely.
    • Trim any excess pastry around the edges to create a neat finish.
    • Brush the entire lattice with the beaten egg to give it a golden and shiny finish when baked.
    • Optionally, sprinkle sesame seeds or poppy seeds over the top for added texture and flavor.
  5. Bake:
    • Place the prepared hot dog lattice on a baking tray lined with parchment paper.
    • Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crisp.
